Mix Up Some Romance Blog Hop!


Wow, can you believe it is already October? I don't know about you, but the cool air, turning leaves, and pumpkin everything is making me want to bake! 
Thanksgiving will be upon us soon, and what better way to get you into the baking mood than to give away a brand spankin' new KitchenAid mixer?


Let me tell you, I have this exact model in black and I wouldn't trade it. I'm so pleased with mine that I tossed my handheld mixer. Yes, I did. 
In honor of this prize, I want to share a recipe that has been around since I was a kid, and let me tell ya, that was a couple years ago. LOL! It is also one of my most favorite cakes. No matter the weather, when I eat this cake I envision tropical beaches and warm sun shine. Now, I realize we should be thinking fall, but winter will be here soon, and we'll all be crying the blues again. 
Anyway, I can't claim this cake is better than sex as the name implies, but it is damn good, and really easy to make.

Better than Sex Cake

Ingredients:
1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
1 (20-ounce) can crushed pineapple
1 1/3 cups sugar
1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
1 1/2 cups heavy cream
1 cup flaked, sweetened toasted coconut



Directions:
Preheat oven to 350 degrees F.
Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.
Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.
Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.


Why did I pick that cake? There's a very good reason. When the air turns cold and you yearn for sunshine, take a trip to a tropical locale with Tattoos and Cupcakes. More importantly, can Bannock overcome his distrust for women and allow Lane into his heart and share her with his best friend?

  4. What I really like about the upcoming two holidays (Thanksgiving and Christmas) is the cooking I get to do. I rock at it. My mash potatoes have pastor's daughter crying when she can't have any because they ran out at the potlucks (chicken boullion granules, sour cream Hidden Valley Ranch dressing and garlic - with no scientific measuring - all by feel). Mayo spread between skin and meat of turkey. Maple sausage, an apple, honey roasted peanuts mashed, artichoke hearts, olives and more for the stuffing. Yeah - I love the cooking part of the holidays and then to see and hear the "Oh man"s that come out all over the place when people eat my food.   6. I absolutely love this cake! I love baking and that seems to go hand in hand with the holidays. I also love getting together with friends and family, and the holidays are perfect for it!

  7. I love decorating for Fall. It is my favorite season to decorate my house. And this Fall I haven't been able to since we are having a new home built in Florida and we will be moving into October 24. So everything right now is in boxes.

  8. This recipe sounds delicious, though I would leave out the coconut as my hubby is allergic.
    I, also, have a kitchen aid and LOVE it! Baking is something that I really enjoy doing and people are always asking me to make things for them. Maybe I'll try this one at the next party we attend. Thank you!
