Wow, can you believe it is already October? I don't know about you, but the cool air, turning leaves, and pumpkin everything is making me want to bake!
Thanksgiving will be upon us soon, and what better way to get you into the baking mood than to give away a brand spankin' new KitchenAid mixer?
Let me tell you, I have this exact model in black and I wouldn't trade it. I'm so pleased with mine that I tossed my handheld mixer. Yes, I did.
In honor of this prize, I want to share a recipe that has been around since I was a kid, and let me tell ya, that was a couple years ago. LOL! It is also one of my most favorite cakes. No matter the weather, when I eat this cake I envision tropical beaches and warm sun shine. Now, I realize we should be thinking fall, but winter will be here soon, and we'll all be crying the blues again.
Anyway, I can't claim this cake is better than sex as the name implies, but it is damn good, and really easy to make.
Better than Sex Cake
1 (18.25-ounce) box yellow cake mix, plus ingredients to prepare
1 (20-ounce) can crushed pineapple
1 1/3 cups sugar
1 (3.4-ounce) box French vanilla pudding, plus ingredients to prepare
1 1/2 cups heavy cream
1 cup flaked, sweetened toasted coconut
Preheat oven to 350 degrees F.
Prepare yellow cake mix as directed using a greased 13 by 9 by 2-inch pan and bake for 30 to 35 minutes. While cake is baking, combine the pineapple and 1 cup of sugar in a saucepan, and bring to a boil over medium heat stirring constantly. Remove from heat and allow to cool slightly.
Remove cake from oven and using a fork, pierce holes into cake. Pour pineapple mixture over hot cake and set aside.
Prepare pudding according to package directions. Spread pudding over cake and refrigerate until thoroughly chilled. Whip heavy cream and remaining sugar until stiff. Cover top of cake with whipped cream and sprinkle toasted coconut on top.
Why did I pick that cake? There's a very good reason. When the air turns cold and you yearn for sunshine, take a trip to a tropical locale with Tattoos and Cupcakes. My heroine is a baker of cupcakes at Naughty Sprinkles. When she isn't baking sinful cakes, she has her hands full with a good-looking cop, and a hot tattoo artist.
Being sequestered on Sunset Point Island is the least of Lane Erikson's worries. Being a witness to a murder may be her demise. What does one do when a network of FBI wanted criminals are looking to kill you? You run like hell, even it's to a place you've never heard of. Dane Hutchinson, local tattoo artist, sets his sights on winning Lane's affection and sharing her with Bannock Garrison, Sunset Point police officer. Bannock never wanted a menage relationship, even though his parents have lived a happy life in one. The idea of sharing a woman bothers him, but losing Dane's friendship bothers him more. As the relationship begins to soar with possibilities, Lane is faced with her world crashing down again, and her life hangs in the balance. Can Bannock and his colleagues save the day? More importantly, can Bannock overcome his distrust for women and allow Lane into his heart and share her with his best friend?
